I have been attending a Culinary School since August 19th. So I am starting this blog kind of late in to my school year. But hey, better late than never. I am designating this post as a "Catch up". I will post many pictures of the work already done in my school year. I promise you will be hungry after. Sorry! :)
- RED VELVET CAKE.
This is the new year. 2014.... Just typing that wigs me out. 2013 went by way too fast. I know I am not the only one who would attest to that. Many exciting mile stones were crossed in the past year. I graduated High School in June, and I moved to Austin, and started College in August. Along with the exciting things, of course there were things to put a damper on my excitement. They were things that I like to call lessons. With every closed door, a new door opened. I cannot be more grateful for the people who have been there since day one, and for the people who I've met along the way to now. I know this is a cliche saying, but I know I would be nowhere without all the smiling faces in my life. There are so many people who believe in me, even when I have my days where I feel like nothing. I could never thank you all enough. Now enough of the serious stuff.
I have some of the greatest friends in Houston. Even though I visit home pretty much every single weekend, I miss them more than they would think. I didn't think God could bless me with more incredible people in my life because I already thought He did that. Once again, I was wrong. On the first day of school, I walked in to a quiet kitchen. There were no familiar faces and it felt just like High School all over again. Boy did that change. We went from crickets chirping, to the reputation of being the loudest, craziest class in the whole school. We absolutely loved that reputation. Some Chef's enjoyed it, and some Chef's thought we were amateurs. Then we would prove to them that even though we are loud and happy, we get the job done. We've produced some amazing food. We've also produced some amazing friendships. My class of 16 has 16 different personalities. Sometimes we clash, and sometimes we mesh so well. We started a band, "Mis en Place". For those of you who do not know what that means; In the kitchen world, it means "Everything in it's place". Be looking out for us on America's Got Talent.
- PEI WEI.
I know, I know. Where are all the pictures of the food I've been promising? Don't leave me yet. I'm getting there. Culinary School has been one of the hardest things I've been through, but it will also be one of my greatest accomplishments. I don't think people realize everything involved in the Culinary World. Nobody will until they enroll in Culinary School. It is definitely rewarding in many ways, I mean all the food we cook is for us to eat. I've been sure not to take any of the food home though, because I know for a fact that I will eat all of it while watching New Girl. Which seems like a good thing, but it really isn't.

Not all of my blogs will be this way. Honestly, I can't really promise you what they will be like. I will be sure to share the pictures of the food we make in class. But I will also share just random thoughts and actions that I think the world needs to know!

The ripped affect on the spiderman tier is made out of gum paste.
The rest of the tiers is all colored fondant.
Bet you wouldn't guess that avocado is the secret ingredient. :)

We did vintage leather books with an apple, and a bookworm.
A white chocolate mousse ice cream with Caramelized cherries, with a caramel sauce brushed on bottom, crushed nougatine candy, and chocolate-cherry sauce. My teammate and I both came up with these plates and pairing of flavors!
A pineapple-tamarind sorbet bomb on top of a tuile cookie with a Pineapple coulis, a sprinkle with homemade Lucas, tamarind candy, and spices pineapples. So delicious! My teammate and I created this dish, Our Chef was very pleased.

Portugese Honey Bread.
Moroccan Coffee date dessert with honey yogurt.
Quimbolitos. Translation: Sweet tamales with cranberries and chantilly cream.
Vasilopita. (Greek New Year's Cake).
Krempita (Yugoslavian Napoleon).
Katafi. SO delicious.
